Cold Storage Failure Case Study: Avoiding $6,000 in Product Loss
How ComplianceMate™ by Ladle Helped a Restaurant Save $40,000 of Inventory After a Major Power Outage
What happens when a walk-in freezer fails overnight?
A convenience store’s walk-in freezer failed overnight, and staff arrived to a large quantity of ice cream and frozen product sitting at temperatures well above where they should have been. The question facing the team was whether that product was still safe to sell. Without a temperature record, the only defensible answer is to discard everything, because there is no way to show how warm the product actually got or for how long.
How does continuous temperature monitoring establish what is still safe to sell?
ComplianceMate wireless sensors record freezer temperatures continuously rather than at the moment someone happens to check. When the freezer failed, the system had a complete record of how far temperatures rose and how long the product was exposed. Compared against food safety thresholds, that record showed which product had stayed within safe limits and which had not.
How much product did continuous monitoring save?
The data allowed the store to determine that the ice cream and frozen product were still safe, avoiding the disposal of roughly $6,000 in inventory. Without the temperature record, all of it would have been discarded as a precaution.
Rapid Response in Three Steps
1. The Walk-In Refrigerator Stopped Working
Although the local utility company restored power to the building, the compressor in the walk-in unit failed. Temperatures began to steadily rise, creeping up until they hit 48˚F to 50˚F—well above the safe zone, potentially putting the entire inventory at risk of spoilage. ComplianceMate™ by Ladle temperature sensors automatically captured and relayed temperature and humidity data to the cloud in real-time. Once temperatures exceeded the defined thresholds, automated alerts were generated.
2. Automated Alerts Triggered Immediate Action
The ComplianceMate™ call center began generating outbound calls to restaurant personnel. “They go through a list of numbers,” the Executive Chef noted. “If they don’t get one person, they just move on to the next person.” That enabled the chef to reach the store manager and, since the equipment failure struck at night and they couldn’t get technicians out until the next day, to contact their food service provider to procure a refrigerated truck.
3. Inventory Was Transferred Safely
Thanks to a quick response, the food service provider delivered a refrigerated truck into which all the food product was transferred overnight. “Because we got alerted so promptly to take action, I don’t think we even had to take any corrective action before the truck arrived and we moved everything over,” the Executive Chef added.
“If we had waited without ComplianceMate the next day, we very well could have been forced to throw all that food away.”
